Healthy Eating for Families: Recipe for Egg Muffins

Recipe serves 12


12 eggs (or for a lower calorie version use egg whites only or eggbeaters)

1/2 pound of lean ham (or Canadian bacon)

1/2 cup chopped onion

1/2 cup chopped green pepper

1/2 cup chopped tomatoes

1/2 tsp. salt

1/4 tsp. garlic powder

1/4 tsp. pepper

1/2 cup shredded cheddar cheese


  1. Preheat oven to 350 degrees. Cook meat and drain.
  2. In a large bowl, beat eggs. Add the onion, green pepper, tomatoes, salt, garlic powder and pepper. Stir in meat and cheese.
  3. Serve 1/3 cup into each coated muffin tins (coat with cooking spray). Bake 20-25 minutes or until knife inserted into center comes out clean. 

Note: Be creative! Add broccoli, fresh spinach, mushrooms or asparagus. Substitute cheddar cheese with feta, goat cheese or swiss.
